天然酵母（サワードウ／ルヴァン）のパン作りは、レシピを一度調べれば終わり、ではありません。生きたスターターは数日おきの給餌（かけ継ぎ）が欠かせず、1回の焼成も仕込み・一次発酵・二次発酵・焼成と、数時間から数日にわたって状態が移り変わります。検索は一度レシピを返すだけで、あなたの種の給餌履歴も、焼くたびの結果も覚えていてはくれません。天然酵母パンノートは、その「続く工程」を記録して、次の一手を教えてくれる、天然酵母パンのための記録アプリです。 ■ 種の給餌とピークがわかる（このアプリの中心）複数のスターターを登録し、それぞれに給餌の周期（常温なら1日、冷蔵なら2〜3日など）を決めておけます。給餌を記録すると、次の給餌の時期を自動で数え、時期が来ると「給餌の時期です」とお知らせ。さらに、給餌からピークに達するまでの時間を実測で記録しておくと、その平均から「そろそろ焼きどき（ピーク付近）」を予測します。種を切らさず、いちばん元気なタイミングを逃しません。 ■ 加水率を自動で計算粉・水・種・塩を入れるだけで、ベーカーズパーセント（粉を100%とした割合）を計算します。種（ルヴァン）の中に含まれる粉と水も差し引いて、生地全体の“本当の加水率”を出すのがポイント。塩率・種の割合・前発酵させた粉の割合・生地の総量も一目でわかり、レシピの再現と調整がぐっと楽になります。 ■ 一次・二次発酵と生地温度を記録捏ね上げ温度、一次発酵・二次発酵にかかった時間を残せます。発酵の速さは生地温度で大きく変わるので、次に同じパンを焼くときの再現に役立ちます。 ■ 焼くたびに比べられる焼き上がりやクラム（断面）の写真、5段階の出来ばえ、メモを記録。カレンダーには給餌と焼成が印として残り、集計では月別の焼成回数・種別の回数・平均加水率・出来ばえの分布を振り返れます。 ■ 天然酵母のいろは種おこし・かけ継ぎ、ピークの見極め（フロートテスト）、加水率、一次発酵、二次発酵・過発酵、保存、トラブル対処のコツを、それぞれ出典つきで収録しています。 ■ できないこと（先に書きます）・パンやレシピの販売・通販の機能はありません。あくまで自分の記録を残すためのアプリです。・発酵の自動検知はしません。膨らみやピークは、記録した時間・温度・実測にもとづく目安です。発酵は粉や環境で変わるので、最後はご自身の目で確かめてください。・端末をまたいだ自動同期はありません。記録は入力した端末の中だけに保存されます。 ■ 収集しないものアカウント登録もログインもありません。種や焼成の記録・写真・設定はすべて端末の中だけに保存され、外部のサーバーへ送信することはありません。なお、本アプリは無料で提供するため、画面下にバナー広告（Google AdMob）を表示します。広告の配信のために Google へ通信が発生します。入力の途中の画面には広告を出しません。アンインストールすると記録も消えるため、大切な写真は端末のアルバムにも残しておくと安心です。まずは、いま育てている種を1つ登録するところから。給餌を記録するたびに、次の給餌とピーク、そして焼くたびの手応えが積み上がっていきます。
