Because a cup of flour simply weighs less than a cup of sugar: • Flour (all-purpose and whole wheat), sugar, powdered sugar, brown sugar • Butter, oil, honey, milk, cream, yogurt and quark • Rolled oats, rice, cocoa, cornstarch, breadcrumbs, ground almonds and more OVEN TEMPERATURES Enter one temperature, read off all the others: • Conventional (top/bottom heat) ↔ fan/convection (rule of thumb: 20 °C less) • Celsius ↔ Fahrenheit • The matching gas mark at a glance SCALE BAKING PANS The recipe calls for a 26 cm springform but you only have a 20 cm one? Küchenmaß uses the baking surface area to calculate the scale factor for all ingredients – for round, square and rectangular pans.
